Ingredients
4 golden beets
8 slices prosciutto
2 cups strawberries
1/2 cup pine nuts, optional
6 cups arugula
2 tablespoons extra virgin olive oil
1/4 cup apple cider vinegar
sea salt, to taste
How To Prepare
1.Boil beets until fork tender, then dice.
2.Dice prosciutto. Hull and quarter strawberries. Toast pine nuts, if using.
3.Add arugula to a large bowl.
4.On top, evenly spread beets, prosciutto, and strawberries.
5.In a separate bowl, whisk together olive oil, apple cider vinegar, and salt for dressing. Then add dressing to salad and combine well.
6.Top with toasted pine nuts.
